Shoulda separated Data's head

They did it in Times Arrow, in which Picard used the severed head to get a message into the future.
 
That raises an interesting question. Why couldn't Data have just been wirelessly connected to the ship's computer? Why did he need to use consoles like everyone else?
I think the same reason we saw the Borg Queen give orders in Voyager, it's very difficult to convey telepathy or data transfer in a visually interesting manner. ST: Picard started doing the scrolling Matrix effect in the eyes of Data 2.0 and the holos which sort of worked a bit but wasn't exactly dramatic.

Plus, all the times he went a bit mental would have been a lot worse if he could have controlled the computer with his mind.

Good question. In-Universe it could be interpreted as a security feature - certain categories of commands to the ship's computer normally require a physical input. But I bet you could find plenty of weird apparent exceptions to that across the series.

@F. King Daniel gave the out-of-universe explanation.

The in-universe explanation is that Data is not a creation of Starfleet and was not built to be a tool, or built to be a member of Starfleet.

He was constructed by a 'mad scientist', Dr Soong, who intended him to be as Human as possible and make his own choices in the world as a Human would. He wouldn't be very Human-like if he could magically connect to any nearby computer over wifi.
 
Seems to me Picard could have removed Data's head and then beamed them off the Scimitar while his body remained to press a button. Put Data's head on B4 or Lore's body and Data lives on.
