Has anyone seen the opening or closing credits with the TOS music equivalents? Maybe too ambitious to expect an entire episode rescored?

Hmm I did not think to time them, but I believe you. Maybe more repeated segments?
Now for an entire episode, who's music would be used besides Alexander Courage's?

They've already used "Amok Time" fight music in " Spock Amok."

A number of TOS episodes had music composed specifically for the episode, sometimes in their entirety and sometimes only partially. Wikipedia lists eight composers including Courage: Alexander Courage, George Duning, Jerry Fielding, Gerald Fried, Sol Kaplan, Samuel Matlovsky, Joseph Mullendore, and Fred Steiner. I'm partial to Kaplan and Fried's work for the series. For example, Kaplan's score for "The Doomsday Machine" and Fried's score for "Amok Time."
