There was also the lifeboat that Sisko & Jake took out of the Saratoga in DS9: "Emissary", emerging from one of the aft-facing shuttle bays. Granted, it took place in the 24th century, but Saratoga was a modified 23rd century Miranda design. It's entirely possible they may have used this design during that era. It's pretty sizable, though. Not sure where they would have tucked those things away in a refit Connie.

Seeing an egress hatch would give us an idea of the size of the potential lifeboat/escape pod. By any chance, did Probert speculate on a description/size of a lifeboat?

Not that I’m aware of.

The idea that those hatches led to a concealed Life Deck with many pods does make more sense than the whole engineering section having to share two smallish cubes if something went wrong.
