It would depend on what genre/themes that non-fan likes. Like recommending Scientific Method to someone who does research in the psychology field.

"Scorpion"'s the big one, isn't it? The one everyone loves. That's the one we'll start with.
Maybe "Cold Fire" or "Warlord" after. I liked Kes, when she was done well.
"Deathwish" I saw recently and remains one of my favorites.

Yeah that's a good list. Perhaps swap out Future's End for Before and After so you also have a good Kes episode like you said?
