They did do that a little bit in the simulator in STIII and the Excelsior's display of Praxis in STVI. Too bad that's about the only times they did that with the main viewer.

Don't forget the "Tactical Plot" from TMP when the Enterprise first encountered V'Ger...

^^But that's a graphic that's displayed separately from a visual image. Even TOS did that on occasion ("Lights of Zetar," "Spock's Brain"). What would be more plausible would be a screen that displayed text and informational graphics on top of a visual image, rather than just the unadorned image.
