I would have the same first 2 as OP. For my third I would add the STID scene where the Enterprise is shot out of warp.

Though not popular or maybe even possible, I would also add the scene where Kirk and Bones jump in the water and swim to the Enterprise. The first time I saw STID I was like "what the heck is that in the water". Then you see NCC 1701 on the nacelle and I was blown away.
