Unfortunately that theory is blown out of the water due to the fact the Borg went to the trouble of travelling back to 2063 in order to stop First Contact and to assimilate the Human Race.

Unfortunately that theory is blown out of the water due to the fact the Borg went to the trouble of travelling back to 2063 in order to stop First Contact and to assimilate the Human Race.
...But since they didn't succeed in that, and since a culture in possession with time travel technology should always succeed in what it attempts (because it can attempt again, infinitely many times), it is likely that this wasn't their actual intention. Rather, it could be yet another way of "farming humanity"... By sending a 24th century engineer back in time and thus iteratively advance the development of warp drive!

Did you forget the whole part where the Enterprise was in the temporal vortex and time changed around them to show the Earth with a population of 9 billion Borg?
Iteratively? Uhhh? I had to look that up.
But anyway. . . . Nothing seems to work out for them Borg. Maybe their next bright idea would be to send a second Cube? Or don't they have any to spare?
Biological distinctiveness without technological distinctiveness is apparently valued less and less these days.
Which is as it should be. When the Earthlings first saw a Klingot in "Broken Bow", did that reveal to them the story of Kahless, or the fact that these guys drink lots of bloodwine and poisonous tea? Heck, our heroes had real trouble figuring out that his culture worshipped warrior bravado. Alien encounters are like that - you probably get all the relevant facts wrong at first.

If the Borg aren't interested at assimilating people,how exactly would they operate their ships when they need the drones to form the Collective, which in turn are made from live individuals (aka people) ?
Also, individuals provide the inside information on technology that they created.
And if there is no technology of relevance present but only an individual, then the Borg can acquire that knowledge on how to make/manipulate the tech from the individual itself.

The Borg have maturation chambers to grow drones in addition to assimilating people.
Maturation chambers are used to accelerate the growth of individuals assimilated prior to their physical maturity.
One could argue the Borg could use cloning for their drones ... but nothing of the sort is ever referenced apart from possibly the queen (who is practically entirely robotic and has maybe negligible % of organic material).
No ... what we saw in 'Q who' was basically something from our heroes perspective and what little the Q himself narrated to Picard (and we all know that he never always told him things entirely).

I can recall an infant being shown. Don't know when though.
In "Q Who?", Riker found some infants with implants stored in big drawers, aboard the first Borg vessel he ever explored. He speculated that the infants are born out of Borg and implanted right after birth. In retrospect, it appears that he was completely mistaken - the infants are generally assimilated already born.
Although no doubt the Borg also assimilate pregnant women, and then let the children be born (why waste the material?), we have heard witness statements from ex-Borg to the effect that no already assimilated woman ever gets pregnant or gives birth - just like already stated in "Q Who?", the Borg are neither male nor female by role, even though clearly the Collective doesn't actually bother to remove their sexual organs or anything silly like that. Whether the Borg practice cloning or other synthesis techniques in addition to assimilating is unknown, but they don't go for conventional pregnancies. Riker wouldn't have realized this, of course.

There was also the infant in VOY Collective which presumably had been assimilated after birth. We never found out anything about it even though it was brought to Voyager.
