Doesn't Q Junior, while powerless, use the Delta Flyer to somehow open a rift/doorway into a distant area of space (can't remember if it was still the Milky Way or not)....

Didn't the ship's systems record how this was done? Or Icheb should've at least asked Junior how it was done. It seemed like a pretty crucial piece of information (for VOY and the UFP in general)

It was another of those convenient moments when no logs are kept by the same technology that can work out what you had for breakfast 8 years ago

It's similar to the lapses of memory Seven has where she can remember obscurely minute details about a species in another galaxy, but not how she performed tasks like opening doorways into fluidic space, which could act as a base to getting the crew home.

I think the average episode should be viewed with a glass of pichofsaltium to avoid frying your brain as to why they don't pick up on obvious clues

Papa Q -- or any other Q, for that matter -- could have erased that from the shuttle/Voyager's logs in an instant if they thought that humans having this information could be harmful. They could even erase the memories from the crew themselves but I think Q would be too egotistic for that. ("What? I'm unforgettable!")
