"Made of flesh." (TAS)
An episode of the cartoon series where the art team tries an experimental approach resulting in proto-Roger Rabit effects. Captain Kirk is hit by a space beam and becomes extra-dimensional -- to the point where anyone who looks at him becomes confused, not being able to comprehend him. After he's hit by the beam he's played by a live action William Shatner inserted into the show.
"Khan: The Eternal Vengenace" (A TOS movie.)
Time traveling genetic engineers clone a replica of Khan and don't let him in on the fact he's not the real Khan. They convince him they saved him from the jaws of death so that he could once again lead genetic engineered beings again. The Federation, in desperation, turns to the one man who beat him twice before: Captain James T. Kirk!
"The Wise Man's Son" (VOY) Alternate Series Finale
While exploring the Delta Quadrant the Voyager comes across what appears to be a Federation space station -- Deep Quadrent One. It was a secret long-term project of establishing Starfleet bases in each quadrent and then moving inward. They get a tour of the station. Then the Admiral tells Janeway he was 'just joshin'' her and actually, she was in the Alpha Quadrent the entire time. The Voyager's sensors had been fooled to think it was in the DQ and had been flying in a circular loop with occasional encounter played by actors. (Why'd ya think ya kept seein' so many AQ aleins, huh?') This was a secret project by Starfleet to see how your average starfleet starship would psychologically handel being straned far away.

That's almost so "grrr!", I can't believe they didn't use it Kinda like a sequel to Projections, bringing the series almost full circle. It needs lacking about 47 retcons, but I think you're onto something with that

100 meter race: A Vulcan takes the gold medal, a Klingon the silver and a Romulan the bronze. No human even makes it to the quarterfinals.
Gymnastics: Alien races takes all medals; all humans consistently show up at the very bottom of every standings list.
Swimming: Aqua-aliens from ocean planets win all medals; all humans come in dead last of course.
Marathon: Since the Olympics are held on Vulcan with its thin air and very hot climate, no human even makes it past the one mile marker let alone crosses the finish line before dropping almost dead from extreme exhaustion or heat stroke.
...I think y'all get the idea of sports in the 24th century.

The Enterprise turns up at Simmonsonia, a planet filled with Richard Simmons clones. The whole crew is then exposed to weight loss plans, causing Picard to become bullimic, which the senior staff have to combat.
Make it Globogym and throw Ben Stiller in there and I'd pay to see that.

Steve67: The U.S.S. Gloria Steinem? I could see a star system named in her honor, but I have difficulty figuring out what ship-class that would be and the registry. Perhaps an outpost in a DS9 relaunch-era fan fic. The Steinem System, the next M-Class star system after the Idran System at the end of The Bajoran Wormhole. Then again, would it be completely implausible to suggest it ~could~ be part of the Legacy-Class production run?

Kids flying crude, home-made kites in a nearby community park as the Dads keep a leisurely eye on them. An art-sculptor / mechanic makes bicycles or shoes horses, while building custom carriages for grocery shopping or shuttling kids/pets around behind both either the bicycles or horses, to pay for supplies to create his/her less-'commercial' projects.
