Pick a new uniform color (s)

I like the 29th century Starfleet unis as seen in "Relativity".

In TOS' time, I'd keep the colors and styles as they are, but add a new one: black, for Starfleet Marines.

If I had to come up with a completely new scheme, I'd pick this:

Command: purple <-- purple is often associated with royalty, isn't it? Being "born to the purple" and all that
Operations: orange
Sciences: green
 
Command (CO and XO)-Royal Blue
Science-White
Medical-Green
Engineering-Gold
Security-Red (Tradition!)
Tactical-Brown
 
They wouldn't need uniform colours. New tech would establish a transparent forcefield around each crewman, giving them the protection clothing offers against the elements as well as phaser beams and other such energy weapons--whilst the forcefield itself (as well as communications) is operated and maintained by a small device worn on the wrist.

And then in one episode the ship approaches a spatial anomaly which interferes with the signal broadcast by the devices on their wrist, thus leaving the entire ship's complement naked!

The forcefields are transparent, so they already appear to be naked, except for the occasional ripple in the field if they are hit by a phaser. :)

Yeah, it's the future, prudence is all but gone right? Bring on the nudity. Odo does it.
 
You solid colors are so limited in your ways.

Science get a paisley, something with pinks, purples, & pastel blues--calming, y'dig? Operations should be plaid, perhaps a nice Cameron Hose. Command...well. They're the head men. Nothing better than pinstripes, baby. All black, with maybe a thin light grey.

Only if you've suddenly made the alert lights into-fast-flashing strobes.
 
Awe well if we're going new tech style, considering we have google glasses now, probably could have a HUD contact lens. Where peoples name,rank,job,etc appear illuminated above a persons head like in a game. And since bio-status can be tracked and monitored by contacts in their uniforms, again like a video game, you could see a persons health and other important information!

I'd have solid black be the ship's chaplain.

^Makes it look religious.

I like the look anyway T'Girl, but I'm sticking with solid black for non-commissioned Starfleet. I think that uniform in solid grey (white trim) should be military.
