I know that there are various threads speculating as to plots for sequels to Star Trek and various ideas for re-casting or imagining classic villains (Khan, Kor, Kang, Koloth, er - that's it). Haven't seen anyone discussing this topic (apologies if I've just overlooked it).
What with nuTrek and its new timeline re-writing the rules, established canon or continuity is of course out the window. So while people got annoyed to see Ferengi or Borg in Enterprise, there's no reason why they or the Cardassians, Breen or even Q can't appear in the next or subsequent movies. Altered timeline and all that.
I'd be pretty sure that Abrams and co will want to have the Klingons as the baddies in the next movie (they haven't been the big bad in a ST movie since TUC - Ursa and Betor in GEN don't count, IMHO). And many would say that VOY almost castrated the Borg by overdoing them. But still, wouldn't it be interesting to see how Kirk and Spock would deal with them? The not-really-emotionless science officer versus the truly emotionless hive machine. Or what would Bones make of the Ferengi? Doubtless he could come up with some classic borderline racist insults for them. And Kirk versus the Cardies? A grudge match made in heaven?
Part of me thinks that Abrams and co should mix classic Trek races with new ones we've never seen at all before. But another part of me thinks that this new timeline ought to allow for a little mixing and matching - to compare and contrast the way Kirk & Co handle villains with the way Picard, Sisko or Janeway did.
