I've actually thought about this a lot, partly for my fanfic and just for fun. Here's my ideas:

USS Katana - fast, hard hitting little warship

USS Mjolnir (name of Thor's hammer) - big, heavily armed and heavily shielded

USS Portia - a Starfleet ship with a cloaking device, named after the character in The Merchant of Venice who disguised herself to trick her enemies.
The Runabouts on the Portia are mostly named after other Shakespearean characters like the Robin Goodfellow or the Oberon.

USS Leviathan - really big colony transport vessel

USS Robinson Crusoe - a long range exploration vessel

USS Indisputable
