The scale chart is just BTS show fluff. It's meant to show their scale in the show.
I really wouldn't want to buy scale models which are not in scale with each other.

Nope. For the non-Discovery line you get weird things where huge, skinny ships like the 1701-E are tiny compared to squatter overall designs like the Miranda variants.
