What about one of those "everybody tells a short story" episodes, only not a flashback using prior footage (as in "Shades of Grey"), but rather new incidents instead?
Or for short stories/new incidents, possibly 12 or so songs about TOS tropes (dead reds, hammy Shatner faces, etc.)

Perhaps an away team could be accidentally transported to a parallel universe where everyone communicates through song.

What about a live episode?
Find some script idea with minimal special effects and find a way to eliminate those. Just some intense, character-centered drama.
Like that one scene in Top Secret, and the final scenes in the finale of Twin Peaks, an episode done backwards.
