Would you watch "Star Trek: Mirror Universe"?
(probably it would have a better title than that... but you get the idea)
Most mirror universe episodes have been popular, and they're fun!
There's a possibility of using the Enterprise cast, or it could focus on a whole new cast/scenario. thoughts?

I'd watch it. It would be just like real life.

Except you could turn it off after an hour.

I don't know. Series from the point of view of bad guys rarely seem to be successful so I'm not sure how well it would do.

Yes, I'd watch an MU series. I would expect it to get old fast, but you never can tell. I think there are ways to keep the premise from just being a bunch of crazy oversexed underdressed space pirates continually trying to knife and/or seduce each other, etc etc ad nauseum.

Get the people from Dexter to do it and put it on premium cable. I've just described the perfect TV series.

PS, turns out the Dexter people are Trekkies. They named an episode "Resistance is Futile" (their best episode to date, too) and had the FBI arguing about TNG and DS9 when they were supposed to be chasing a serial killer.
