Regardless, I thought he vastly less interesting or entertaining than he was in KotOR 1.

Yeah, agreed. He seemed far less developed this time around. Too bad, as he was such an interesting character the first time around and I was looking forward to learning more about him.

And yeah, out of the first one, Jolee Bindo was my favourite companion. He oozed class.
