There was an extra from ToS who has appeared alongside each of the five captains, but I can't think of his name. He's got an article at Mem Alpha though.

Meh, now I really want to know. I found a few people who were in tng, ds9, voy and ent, but none who had been in all the 5 shows. Anyone?

That would be Tom Morga, who is the most prolific extra and stunt double in the Star Trek franchise.
