Yes, he is the only one.

why did the others not come back?

Several reasons why:
Doohan and Kelley are dead. Shatner´s Kirk died in Star Trek Generations.
It´s an origin story which takes place before TOS so the characters are much younger than the old cast members.

There was no way to bring Kirk back.

Every other one is dead as far as character goes. I would've like to see a Next Gen cameo though during the mind meld part, Stewart did one for Wolverine.
