I know she was probably the most insane of all of them, but I really liked Phoebe. It's great to watch Friends on occasion on syndication. I missed most of it when it was on, but it's a funny show.

Ross was a better character the first couple seasons, but as the show went on, he became one of the worst characters.
I'd probably say Rachel was less annoying than Ross overall.
Though really, they were clearly on a break...

They were quite clearly on a break that Ross should have taken much sooner.
The only time I liked Ross was when they all watched the video of how he ended up getting Rachel pregnant. She was trying to convince everyone that she came on to him but the video proved otherwise.
It was quite a momentous occasion for American TV - for the first time ever a male sitcom character got to be right in an argument with a woman.
They were quite clearly on a break that Ross should have taken much sooner.

Ross has always been my favorite, though Chandler is nearly tied for that spot. I think that Ross and Chandler were the most "normal," if you could call it that.
The only ones who annoy me are Phoebe and Joey.

No. At that point, Rachel hadn't gotten annoying - well, maybe a little, but if you have to make a list of pros and cons between me and another girl, I'd be a little put off, too.
And, they'd only 'broken up' that afternoon.

Rachel was annoying from day one. Not only did everyone copy her haircut, but they copied her "I'm too pretty to know anything!" attitude to life.
Rebound ? In his head, whether it was true or not, she was already cheating on him with Mark anyway.

Pff. Rachel was by far the least annoying character, and probably not coincidentally also the one who grew up and developed the most during the course of the show, followed by Chandler. While she could still be superficial and vain, she was a hell of a lot more mature than Ross by the end.
Monica became hyper-obsessive, controlling and shrill. Joey's intelligence dropped to that of a brain-damaged toddler. Ross turned into an insanely jealous borderline psychotic. Phoebe ended up as a mean-spirited, spiteful bitch. Even Chandler wound up somehow more emasculated and wimpy than he was at the start. Only Rachel came out of the gradual character assassinations in a better position than she began, if only because of her low initial baseline as the spoiled, vapid, naive one.
I still love the show and find it funny, but in hindsight it's a textbook example of what happens to characters when the writers gradually expand their 'popular quirks' to become their entire personalities, because they know it's an easy way to guarantee a laugh. "Okay, we just ended a fairly emotional scene. Should we cap it with a gag by having Chandler say something sarcastic, or Joey saying something stupid?"

Something must have happened to Joey sometime during the first season of the show. When we first met him he was pretty averagly smart. But then, yeah, he got more and more stupid.
But you are correct that Rachel as character grew the most over the course of the series. She started off as a very self-involved and stuck-up, clueless, twit and grew to confident career woman and mother.
