From my understanding of an interview done with the actresses, the script suggested tailed Caitians for the scene - but a range of different alien ear and face appliances and colours were made available for screen tests. Some more cat-like than others. In the end, the director seemingly nixed the more felinoid of the facial appliances and went with more minimal makeup, plus the tails.
So they are as much "Caitians" as TMP's Rhaandarites were scripted Vegans from Vega, and Jedda seemingly ended up as a Deltan with black hair in ST II.
Sometimes changes happen, and the species name remains non canonical. Even M'Ress is never named as a Caitian onscreen in TAS!
Maybe Kirk's playmates were half-Caitians, or quarter Caitians, but they'd still be entitled to call themselves Caitians.
^As far as I'm concerned, they aren't Caitians, full stop. As you point out, the idea to make them Caitians was merely the first step in the process, and it was left well behind by the end of the process. They're no more Caitians than Kirk's ship is the Yorktown.
