In the Roswell episode "Secrets and Lies", Max Evans auditions for a role in a fictional episode of Star Trek: Enterprise directed by Jonathan Frakes in which the Enterprise crew have contracted Rigelian fever and Doctor Phlox must obtain ryetalyn to cure them.

Found this tidbit while looking up ryetalyn for the ENT Episode Pitch Game.

Are there any other imaginary Trek movies, TV shows, books, etc mentioned in other works?
 
More than a couple, I'd wager. If we're counting watching real TREK on TV within a theatrical movie, THE OUTSIDE MAN did it with a very young Jackie Earle Haley. Then TAPS a few years later (Spock's Brain).

Plus, there was a fictionalized TREK homage in ZAPPED! which (if memory serves) showcased the first black Vulcan. Some of it wound up in its theatrical trailer.
 
In Mad Men season 5 episode 10 "Christmas Waltz" one of the characters is trying to sell a Star Trek script called 'The Negron Complex.'


As presented in Christmas Waltz, Paul Kinsey’s Star Trek script, “The Negron Complex,” about a world where white people were the slave class, was not very well written. However, it’s worth noting that during it’s original three year run, the producers of Star Trek had actually considered an episode that would have taken place on a planet where light-skinned people were slaves to dark-skinned masters.
