I never noticed the scary pumpkin in the intro

hahaha never noticed that myself.

Something else: the stars texture inside the rings of the planet is different than the stars when the camera pans away from the planet towards the Enterprise. Just another little tidbit I noticed.

If you can't see it maybe you should shake your head.
Though it's not intentional (though the Spock one is supposed to be) you can easily see it once it's pointed out.

That's because that new planet was spliced onto the footage from the Seasons 1-2 credits, but they didn't bother to match up the starfield. Or, maybe they couldn't match, because we're approaching the new planet from a different angle than the angle we see the Enterprise approaching.

Good point. It never crossed my mind that they'd have to match up the approach of the Enterprise from the original intro to the new intro.
 
I still don't think it looks like a Jack'o Lantern face. Even with the "eyes" and "mouth" pointed out and my head tilted to the side... it looks like a planet.
 
Never noticed the tilted jack 'o' lantern in the credits before. Until now.

If you pause that youtube video at the 18-19 second mark the top half of the planet looks like a smiley face.
