I agree, expecting Nimoy to be the sole representatiave of how a species behaves for billions is yes illogical. ST universe show Terrans with all their flaws, why not other species. The Vulcans were too one track in the TOS world. In ENT there was more variety. Vulcan prejudice made sense, they were technologically superior so their snobbish attitude was understandable lol
Yes I had forgotten about them wanting to take a break after voyager, that would have been the best all round as the show was suffering from burnout I think the ratings from DS9 - final films were declining and the nu-trek stuff is being well received I think because of the break the show has had. But yeah I am re-watching season 1 at the moment and it really is not as bad as people remember, certainly I am finding it so far better than I did during it's original run.
