How old was Spock?

Canonically?

24 human years old. He's born in 2230. "The Cage" happens in the year 2254.

^^ The Okudachron gives 2230 as Spock's birth, which would make him about the same age as Nimoy was during the series.

No, I mean, why 2230 instead of 2231? Why not just go with the year Nimoy was born in, since it seems to have been the original intent to have them be the same ages as the actors? Is there a particular reason why it shouldn't be 2231?

Ages can be somewhat nebulous, but wasn't the trend to have the character approximately the same age as the actor was?

Never as a formal rule. When Chekov declared onscreen that he was 22, the line was delivered by a 30-year-old Walter Koenig. When Kirk said he was 34, Shatner was 36. TNG retroactively established McCoy's birthdate as 2227 and Scotty's as 2222, making them respectively 39 and 44 at the start of TOS when both actors were 46 at the time. The only character ages among the core seven that the Okudachron bases on the actor ages are Sulu and Uhura, and both of those probably need to be bumped up a few years to reconcile with the new movie.

So there's no "trend" to match character ages with actor ages.
