I agree with most people here. Khan escaping Ceti Alpha V and going after Kirk is important. You know he's insane and bent on revenge.

The actual hijacking of the ship is not that key.

Well, The scene could have added a little to Khans menace, (for those that maybe hadn't seen space seed) but more importantly, established that Khans henchmen were more dangerous and deadly in their own right, a bunch of them were just standing around with smirks most of the film.

It might have been interesting, but I'd argue it would ultimately be unnecessary. And given some of the constraints the movie would be being produced under, possibly counter-productive.

They looked like a bunch of roadies for some hair band mostly.
