Well, on screen, we get solid confirmation for one thing at least: in pon farr, there's no necessity of either 1) taking a mate or 2) dying. Spock, Vorik and Tuvok all clearly managed without.
It is possible that pon farr culminates in the messy plak tow, which in turn may lead to the kohn ut kal if fee fight, which in turn may result in a death or several. But whenever those things happen, they are treated as anomalies, sending stoic Vulcans gasping in surprise and displeasure.
In general, if there's a male in plak tow, odds of lots of copulation are likely to be high - a Vulcan male who refuses to listen is pretty much an irresistible force. But one can catch plak tow from the telepathic equivalent of a dirty toilet, apparently, rather than having to wait for pon farr or a particular calendar date. And certainly one can have sex without having plak tow, even if it requires some of the many chemicals a modern Vulcan industry can effortlessly provide.
Basically, the only thing left dangling is whether sex outside the seven-year cycle will result in kids. We can easily postulate that there'd be a biological complication there to that effect - perhaps also that this is a female thing, giving the fairer sex at least some say in the overall process. But the point is, we are under no onscreen obligation to postulate that.
