I believe this was covered in the Star Trek: Aliens & Artifacts book put out a number of years ago. They discussed many of the slightly-modified off-the-shelf products they turned into props. They gave step-by-step instructions for creating a dermal regenerator from a hairbrush and the away team lights from a wrist brace and flashlight.
It's very common for props to be straight off the shelf items, or slightly modified. Here are a few more examples
