Lesson learned: Never buy a game console again, especially if it's made by Sony. I'll just stick with PC.

I live in mortal fear that my PS3 will die and I will forever lose my ability to play PS2 games upscaled

I was under the impression that Sony would replace a defective 60GB unit with another 60GB unit, allowing you to keep the built-in backwards compatibility. Is that not the case?

I have a 60gig PS3 and to be honest I don't really play PS3 games on it at all and no PS2 games. So if it breaks and I wanted to get it repaired they will give another 60 or a different?

They'd either repair your 60 or they might give you a new 80.
