I think it's rather silly to assume that your garden would remain safe under such a scenario.

Perhaps, maybe, I've always heard it different; still you pluraled it wrong.
I grow tomatoes, green peppers and herbs. I'll have a couple dozen plants growing in rubbermaid buckets. It saves some money as those are two costly items in my area.
I am thinking of putting in a hydroponic setup using talapia to "make" the fertilizer.

Why would my potted plants in my sealed house extension be effected by the same scenario?
To others talking about pests, it's a house extension, it's sealed and has a upvc door, no pests are getting in.

Pests or their larvae can be in the potting mix or compost you use unless you are using a soil free potting mix.

If you think the limited supply of food you grow in a garden inside or out will make any difference if supermarkets don't have any food you are living in a dream land with the unicorns.
It will make a difference, it will give me something to eat when I'm on the brink of starvation.
A small supply of Cucumbers, Tomatoes, Peas, Carrots, Lettuces and Sprouts is better than nothing.
In case of that sort of scenario would probably be easier and wiser just to buy and store tinned food, rice, dried legumes and other non-perishables.
I make my own compost but it certainly wouldn't be entirely pest free.
Yeah, my strawberries are slowly and methodically taking over my garden, too!
I always plant herbs, tomatoes, strawberries (and blackberries this year), onions, and a variety of exotic peppers. Last year I planted catnip and the garden ended up with a cat infestation.
Some suggestions:
Stevia is fun and a great sweetener.
Chocolate-mint is to die for.

Last year I grew all sorts of exotic peppers and the seed packets were only a dollar so per variety.
I wouldn't have a problem with cats if I grew catnip. Most Australian cats are immuned to the effects of catnip (for genetic reasons).

Trust me, I'm already stocked up to the ceiling with tinned food and rice and pasta etc etc etc. It would still help to grow food of my own, even a massive supply of tinned food will eventually run out and who knows what is going to happen in the world, supermarkets could be empty for years with people fighting to get what little there is.
Growing my own food will help and if the need ever arose I'd be able to expand the level of growing.
More specific suggestions:
Manzano pepper Capsicum pubescens.
I grew these last year and hoped they'd make it through the winter, but I fear the deep winter cold has killed them. That wouldn't be a problem in your sun room.
Aji Dulce pepper - a heatless habanero!
I loved eating these, and there's absolutely no way to tell they're not a fiery red habanero unless you take a bite. This makes for a great prank as you happily munch the fake habanero while offering a real one to a friend.

You sound like someone who wears tin foil hats, you do realize I Am Legend is a movie right? If stores are out of food for years you are fucked. A tomato plant will not help you with that at all. More so because even if society is somehow still together in some way we will need new gardeners to help out and you clearly have no clue how to do that.

I wont be growing a Tomato plant. I will be growing several plants of several different varieties. Each plant capable of producing multiple fruits/vegetables.
Any fruit or veg grown is better than none at all.
