I'm just going to ask this question knowing the answer(s) will be quite subjective..

Watched the first ep just now. Have not read the books. I want to know if the gore and sex content is on par with The Sword of Truth series (the books). I stopped reading The Sword of Truth after the second book because all the torture and bondage stuff was too much for me, I actually regret having read them at all (leaving aside that they were also, imho, not great writing). So I'm just trying to gauge if I would be in for the same reading these books and, possibly, watching this series.

I liked the first ep, plenty of interesting stuff in it.
I haven't read the SoT books, but there is a fair amount of sex and violence in the A Song of Ice and Fire (A Game of Thrones is the name of the first book) books. It's fairly explicit IMO, but (at least the stuff in the first couple hundred pages of the first book) isn't over pornagraphic or anything.

Explicit sex doesn't bother me overly, it's the torture/bondage element that was so prominent in SoT. That said I do tire of explicit sex scenes when they don't seem to add much to the character. If we already know that X and Y have sex I would rather see X and Y obviously post coital rather than pumping away at each other. Still, I can man up and watch it for the sake of a good story.

Do most eps of Game of Thrones have lots of sex scenes in them like the first ep?

^ There's very little torture\bondage in the books, at least not anything that's described explicitly. Rape is pretty common, as one would expect in a violent medieval society, but it's never described in any real detail or anything.
