Even if you accept that "Sacrifice of Angels" example, those ships are dozens of years in the future from TWOK and I doubt had original issue parts. Late model F-14's didn't have the same engines as early models, and they sure weren't 60 years apart!How the heck do you know that the Reliant is more maneuverable? Based on what?However, the Reliant is more maneuverable, and coupled with the heavier armament, would probably run circles around the Enterprise! They both have their strong points.......but the Enterprise refit is a work of art!
Try watching the DS9 episode "sacrifice of angels". The Sitak and Majestic look to be maneuvering wildly in battle. Besides, they just look more agile than the Constitution refit! Also, the Enterprise is 40 years old in TWOK, and the Miranda design seems like a more modern design, so it would stand to reason that she would be more maneuverable, as the Miranda is significantly more compact, streamlined and less bulky. Not nearly as cool looking though!

The Reliant doesn't look more modern. It has all the same features just in a different chassis.
Streamlining doesn't help you in a vacuum, and, frankly, with those big palettes of greebly widgets on its back, the Reliant would lose to the Enterprise in a wind tunnel.
