I thought that if they started Star Trek: Enterprise again (which they won't), it would be cool to have a variety of species concepts behind them. I'll give you an idea of what I'm talking about. For instance, they could have a species that was had the similar production value to the original 1960's show (don't make it boring and not unique,) TOS revisits (think the Cloud Minders idea for Season 5, something that they could do now like the Xyrillians and their production values, and various CGI species (like the Mute from the episode "Silent Enemy.")
The Horta (the pizza-looking species) would be a good idea for #2 and an influence for #1. I am just sick of the "forehead-of-the-week" every new episode.
In other news, I hope that the Reboot universe gets this idea for future movies.
