Eating mice: how?

Fun fact, before it was banned (due to health concerns) musk rat was considered a delicacy in my country of Belgium.
You can't buy it stores, but if you know where to look you can still find it. I never had though. My grandfather said it tastes like rabbit. It was also sold under that name "water rabbit"

Catching them is still legal and encouraged as they're an invasive species that undermind dams and dykes and Belgium is one of the low countries, so our dams are important. Can't have musk rats (who are technically more like beavers than rats) dig tunnels under them. It's even considered "a civic duty" to get rid of them.

They posed a very real threat, so the government called on the people to catch them way back in the old days. And people started eating them, because why waste good food.

Legend has you can still get it in restaurant near waterways in Hamme. I'd love to try one day
