Because I don't believe it is possible to fall so in love with someone so completely over a matter of hours that you'd be willing to sacrifice your career, friends, family, and risk your life in order to be with them. Sure, it's possible to fall in love so completely, but to do it so quickly shows a major personality flaw. I agree in theory, it's more than possible that after living 8 life-times Dax wanted to experience something new and the quantum reality stuff seemed like something fresh. But that's not the way it came across on-screen, rather than seeming like a wise elder being that came to an important decision after much thought, Jadzia acted like a teenager that wanted to elope with her boyfriend.As for the general principle of the thing... Falling in love so quickly and being willing to sacrifice so much might be the result of a personality flaw in a normal person, but for an individual with centuries of experience? I don't know. Instincts might be sharper, the thirst for new experience might be stronger, you might trust your feelings more implicitly.
