From the list the following were in seen in DS9.

Steam runner class - Canon, appeared in a couple of DS9 eps
Saber class - Canon, seen in a few DS9 eps
Centaur class - if this refers to the class the USS Centaur falls under than yes its canon and its only appearance was in DS9.
Akira class - Canon, appeared in DS9

The following are canon ships but did not appear in DS9

Challenger class - Canon, only seen as wreckage in TNG's BoBWs
Nova class - Canon, only seen in VOY
Freedom class - Canon, only seen as wreckage in TNG's BoBWs
Norway class - Canon, only seen in First Contact due to the loss or corruption of the CGI model.
Korlev class - Canon, the Korolev never actually appeared on screen.
Delta class - If by this you mean the Delta Flyer type shuttle, canon but only seen in VOY
Springfield class - Canon, only seen as wreckage in TNG's BoBWs
New Orleans class - Canon, only seen as wreckage in TNG's BoBWs
Niagara class - Canon, only seen as wreckage in TNG's BoBWs

The following are ships are not canon

Archilies Class - The Achilles class is a ship from the game Dominion Wars, so it isn't canon.
Long island class -
Aegean class - Not canon, from Star Trek: Armada 2
Tetryon class -
Luna class - Not canon, from the novels.
Vivace class -
La Fayette class -
Sentinel class -
Mnemosyne class -
Rigel class - This is one of the classes that is only mentioned in the Star Trek Encyclopedia, not sure how canon that makes it. But it never appeared or was mentioned on screen, so I'll say not canon for now.
Defender class -
Nimitz class -
Explorer class -
Selfridge class -
Excalibur class - Appears in Star Trek Online.
Century class -

There was a USS Monitor, it was a Nebula class ship. There is no canon USS Celestial.

^ As far as we know, the Ambassador class USS Excalibur seen in Redemption was still around, right?

So an Excalibur class would've been unlikely, unless it was a really old ship.

If it did exist and made its first appearance in DS9 there is no reason it couldn't be a new class.

The Prometheus classis a newer design than the Nebula class of which we saw a USS Prometheus. Plus DS9's USS Yeager has a higher registry than the Sabre class Yeager from FC, which might mean its a newer design too.
