I like number 4 the most.
1, 2, 4, and 6 are good; never did like the red UFP pennant. Although I do also like the idea of going without the boomerang or the pinstripes, just the name and registry.
#2, no boomerang, no U.S.S. Just 'ENTERPRISE' centered and low over the windows. An echo of the same on the refit's fantail.
Oooh good idea. I hadn't even considered dropping the "U.S.S." Let's see how that looks...
I'm all for a blank wall. It seems more Jefferies-esque. YMMV.

Here's a comparison with "USS Enterprise" and just "Enterprise", sans boomerang. I think I like the first better. It seems more TOS, in my opinion, even though #2 is more in line with the hull markings of the TMP Enterprise. Thoughts? Also note that I switched the colors on the cargo doors from black to yellow, which I like much better.

Now that I see the comparison... yeah, I've gotta go with #1 too. 
I am inclined to think a blank wall is what would have been done, for the reasons I stated. That would have been background for any shot looking forward and I doubt a big graphic would be something they’d want to contend with in any such shot. For the same reason I suppose we saw static displays above the bridge stations - so as not to distract.
That being said, if you feel compelled to fill that space, a fantail graphic a’la TMP is the least distracting.
It kinda feels like there are too few windows on the observation gallery there. But that could just be me.
As to the bridge overhead screens, they were originally supposed to be flashing through slides as seen in "The Cage", but reportedly union projectionists were required and the extra expense was deemed not worth it, hence the backlit art.

I agree. And I think there are clear in-universe reasons why they might want windows all along that fore area instead of just having them concentrated in the center, at least to the point of having one or two more directly above each of doors 1 & 2.
I'm actually tempted to suggest "-ENTERPRISE-" in a nod to the TMP-only version of the fantail.
ENTERPRISE (no USS) feels most in line with the Jefferies aesthetic to me, if you're going to use text. I might consider a single UFP banner with no text, but that's just spitballing.
I'd vote "ENTERPRISE" by itself, but much smaller to be less conspicuous or just blank as suggested by @aridas sofia / @Maurice.
I think it would be more nautical tradition to just have the name and not "USS" emblazoned anywhere. In fact, to be a real nautical geek about it, perhaps it should be CA Enterprise, "CA" being the traditional abbreviation for Heavy Cruiser, Armored. 
Here's my take. No.2, without the Boomerang, would be from the first pilot. No. 5, without the flags, would be from the second pilot. And No.6, without the swoosh, would be from the series proper.
As for the second set of pictures, I think having "NCC-1701" rather than "(U.S.S.) Enterprise" would feel more correct to me. All the shuttlecraft just had NCC-1701/#.
