That's not his "real" name, it's just the family name (as Amanda points out in "Journey to Babel" when Kirk tries addressing her as "Mrs. Sarek"). Spock is his given name. In the West, we're used to people being formally addressed by their family name/surname, so "Mister Spock" would seem like the equivalent of "Captain James" instead of "Captain Kirk." But there are societies where the given name is the primary one to use even in formal address, e.g. in Arabic or Vietnamese.

I always thought is was how his name was actually pronounced in the Vulcan Language (IE True Vulcan names are actually unpronounceable in English/Federation Standard - so Vulcans choose a 'Federation Name' to use when interacting with other Federation members and species.)

I think the way they will handle the "It has kept Spock and Sarek from speaking as father and son for eighteen years" is that Spock will be so infuriated Sarek was duped by Section 31 and had him nearly mindwiped that Burnham will do all the talking to Sarek while Spock returns to duty.

There are plenty of languages that do put the surname first, like Chinese, Japanese, and Korean. In Trek, Bajorans put the surname first.
