Casts are utilized for a variety of things, like giving the makeup team something to work with when it comes times to apply fake blood and such for head injuries.
Yes. I fully expect all of the principle cast to have high resolution 3-D scans made of their face and body for CGI models to be created for VFX shots already in the library if/when needed in the future. And for that matter I would expect these days that the sets are all LiDAR scanned before being deconstructed and put in storage or destroyed. Why?

I could see CBS doing a few VR exp with Discovery. The potential market is there, and all it takes is a fully rendered bridge and fans will be signing up by the busloads!
