Defiant officers missing in first contact.

It's never been officially stated that's the case, but it's a logical deduction. After all, we've seen confirmed changelings foil blood screenings on other occasions, hell in The Adversary one impersonating Bashir was able to not only pass himself off as solid, but turn Eddington's blood sample into shapeshifting goop. Joe Sisko could figure out the ploy. And besides, a changeling infiltrating a society which has a singular obsession with bladed weapons would logically prepare himself for inevitable cutting and or stabbing.

To be fair, this did go down before Sisko showed his fleet leading prowess and tactical ingenuity in the Dominion War.
 
Sisko may have decided himself that he may not have maintained a cool head with the Borg... At any rate he trusted Worf to Command the Defiant and did so often without sending everyone else along.

In fact the only member of the crew I was surprised not to see on that ship was O'Brien seeming he was originally in TNG and sending the ships engineer into combat made more sense than a particular Doctor or Helmswoman. The result would have been largely the same but I would have loved to have seen O'Brien teaming up with La Forge and Barclay on the surface mission.

As for the Defiant's performance, she is mentioned during the fleet calls at the start of the battle and while she is in bad shape when the Enterprise joins its a good few hours later. We see her bridge is trashed, multiple breaches in her armour and her weapons go offline during the sequence but she has been at it the whole time.

The criticism for the Defiant has always been unwarranted in my mind, she was meant to be the first of a "new Federation battle fleet" which I always thought meant she was meant to work as a part of a wave of other Defiant class ships. Imagine the Defiant in significant numbers firing those powerful Pulse Phasers slicing up the cube while dodging Borg weapons fire. The Defiant in my head was always meant to work similarly to how they utilised the White Star Fleet in Babylon 5.
 
What seems more likely is the Defiant was already out on maneuvers or a mission or assignment or something. An emergency summons to rendezvous with the fleet to counter a Borg ship was issued, it was more practical to take the Defiant directly there than head back to the station, pick up the senior staff, and then head to the fleet.

Although...
They all booked holiday for that week. Quark was left in charge of Deep Space Nine.
That's actually an episode I want to see.

Yes Sisko should have been at DS9 because he has a responsibility to that stations and Bajor, he's the commanding officer and if the fed fleet failed and the Borg did defeat the federation it's his place to defend Bajor when the time comes. We always look at it from an audience point of view, Starfleet should be made up of all kinds of smart qualified people not just the ones we see on screen so I don't think Starfleet command would see the situation the same way we do.
