I think there is a novel which states that the 'ridge' Trill are a lesser-known off-shoot that the 'regular' spotted Trill reluctantly accepted into their ranks. Unfortunately, I don't know which one it is.

Personally, I prefer the spotted Trill. Forehead bumps seemed... overdone. Even then. Plus, she might have looked too much like Kira.

I believe they switched from ridges to spots because Terry Farrell was too beautiful to cover up.

Depends on who you ask. Memory Alpha lists it as the writers said exactly that: she was beautiful and the appliance made her ugly. Nonetheless, there was an interview where Terry said she was allergic to the original makeup.
