Chipotle: Queso Cheese/Nacho sauce.

If you're really daring, learn how to make your own.

Nothing better than a homemade tortilla chip. Actually, just learning how to make tortillas is a life-change skill. (Really.) They're so versatile and, when made from scratch, fairly healthy.

Plus, the basic process is the same for so many other cultural breads. Like pitas, [East] Indian breads, Moroccan, and others. Even small pizzas.
 
I ate Chipotle twice when I was in CA a couple years ago and I thought it was not awful but horribly disappointing because it tasted exactly like what I make at home.

I vastly preferred the greasy mexican stuff I ate from vans and non-chain places which did not taste like anything I could make at home and was totally utterly delicious.

I can see why healthy people prefer Chipotle but bleh.

I've definitely had better Mexican food at local non-chain places, even if it's still Tex-Mex rather than proper, traditional Mexican fare (ie: brain).
