Kirk was already Brought back to life. Section 31 would have learned of the events on Veridian 3 and acted quickly to bring his body to a secret location and to be kept presrved in stasis so it can be taken through the Guardian or Forever, to Planet M 113 or the genesis Device could be used again to renew his body. Afterwards he would be kept in a safe house and kept apprised of the events of the upcoming Dominion War, etc. The Enterprise-E was quickly re designed as per his input. He just needs to be seen onscreen. In the darkest Hours of the Dominion War he was consulted on for stategies to use against the Federation's enemies. He would have been promoted back to Admiral and assigned command of an advanced Sovereign Class Starship at some point.

Yeah, sure with tech knowledge that was a century behind the times. That would be like using a sailor from the revolutionary war to give advice about designing an aircraft carrier.
