My good friend and next-door neighbor growing up was an official "genius" (ne has an IQ of somewhere around 150 to 160 IIRC). However, there were times as a teenager that you would barely guess that this kid was a genius, let alone someone who would succeed in life. He has long since matured and is now a tenured math professor at a major university and has published papers on advanced mathmatics that are respected by his peers (which I have read online and have no idea what the hell he is talking about
So if Pike says Kirk is a genius, then it is established that Kirk is a genius...I don't need to see proof (although the rest of the film establishes that Kirk's intelligence is very high).

Maybe one scene where he is in fact acting like a genius would of helped, so I woulda say hey...he looks like a cut up but this guy really has his shit together......the actor didn't convey genius to me. Maybe you can buy whatever they feed you hook line and sinker...But I do not.

The definition i'm using to believe it 'hook line and sinker' as you so gracefully put it goes something like this: 1) objective starfleet tests for intelligence 2) he scored in the genius scale.
