I haven't read Burning Dreams, but in STID, Admiral Marcus reveals that he encouraged young Christopher Pike to join Starfleet. Given this would've been before the 2233 divergence, how does this mesh with the novel?

It doesn't. I don't quite remember the details, but it was a guy named Charlie (a friend of his mother, or stepdad, or something) that inspired Pike to join Starfleet in the novel.

EDIT: I checked, it was his adopted father Charlie Pike, a Starfleet officer, who was the reason he joined. His admission interview was conducted by Admiral Straczeskie (p 144)

What's more disturbing is, since nuPike presumably never went to Talos IV, doesn't this mean the Talosians are in pretty much deep doo-doo? Obviously Burning Dreams can't happen in the Abramsverse, since it depends so much on Pike. Poor Talosians.

Another early influence on Pike was the Andorian, Admiral Mahirn, who was introduced in Marvel/Paramount Comics' "The Flat, Gold Forever", #7, [Star Trek: Early Voyages (1997)]. Mahirn was the godfather of Christopher Pike:
