Like I said, after my second viewing of the movie, in which I was specifically looking to settle this question (and a couple of others), I'm pretty darned convinced she was assigned to Enterprise. I could still be wrong - it wasn't spelled out in so many words. But the very happy look on her face when she got her assignment - which we didn't hear - said to me that she was A. on the flagship, which everyone wanted, and B. on the flagship, where they both expected Uhura to be, as well, until a few moments later when Uhura gets told "Farragut" and has to go talk to Spock.i do hope she escaped into a life boat of some type.
