Plenty of examples in Voyager.

And there were a few random non-human Borg in "First Contact."
 
Borg has a problem, they do not have children and need to turn everyone into a Borg. Question, what happens to the Borg when they turn everyone into BORG?

Did they find a way to have babies somehow... in a VOY episode maybe with cloning or something? Or maybe they just assimilated babies...
 
I think that the question here is both entirely too broad, and also a little odd. Have you seen much Star Trek? There are lots of examples to be found.
 
How long is a Borg's life expectancy? Is it the same as the species that the assimilated? Or is it longer?

As the Borg not only assimilate individuals but also their 'technological and biological distinctiveness' I would assume that most drones share a fair amount of genetic information. With their magical nanoprobe technology they might have the ability to specifically alter the DNA in every cell in the body. When they assimilate a new species all their beneficial genetic adaptations are then passed on through the collective. Thus, once you become Borg you really cease being a member of your former species and mutate into something different. Now considering they have integrated the evolutionary and technological adaptations of thousands of species, I would recon a drone can live for a very long time, maybe even indefinitely. Also, they can replace any organ, tissue or implant when ever they want and I am sure they have found ways to deal with age related DNA degradation, which is one of the main causes of senescence. The Borg are so advanced, I doubt there is much they can’t do from a medical/cybernetic standpoint.

Now, how the Doc and Bev were able to bring back Picard and Seven after that kind of alteration I do not know. Maybe the Doc used nanoprobes? Bev however, didn't seem to be aware of them so I don't know what she did.
 
"Infinate Regress" featured many non-human Borg. Seen were a Klingon, a Bajoran, A Cardassian and several unidentified aliens. Seven also displayed the personalities of assimilated Ferengi, Krenim, Vulcan, Bolian and Terellian.

"Survival Instinct" shows three former drones; one who was Bajoran. "Unity" featured several ex-drone species including a Romulan.

The Borge Children were Icheb (Brunali), Mezoti (Norcadian) and Azan and Rebi (Wysanti)

The Borg Queen was not Human (Species 125), Arturis' people (Species 116), Talaxians (Species 218), Hazari (Species 4228), Ktarians (Species 6961), plus over 6000 others (mentioned in "the Disease"). The El-Aurians were probably also assimilated as were any given species that serves in the Federation, since we know several were taken during Wolf 359.
