They did do it in Voyager, but that future ended up in the oblivion file when it was undone by the Voyager crew's umpteenth temporal revision.

Let me clear for all those viewing this thread, I am talking about series finales that take place ENTIRELY in the future.

Not sure of this one, but iirc, Will and Grace's finale took place in the future for the most part. It worked out pretty well . Loved it. It was one of those finales which was just as good as any regular episode, funny and well written.
