Are there any AU SW books where Vader doesn’t have the suit?

I'm not even sure there are any alternate universe Star Wars books?
 
^Well, there's Star Wars Infinities, Three comics that tell an alternate take on the OT.

And to the original question: There's The Star Wars, also a comic that was adapted from Lucas' original draft of the first film.

As far as I know, there aren't any books.
 
The Star Wars, the comic based on the first draft of the movie that eventually ended up A New Hope, is the closest thing to this I know of, but I don't think it's really what you're looking for.
The Infinities comics split off fairly close to the movies, so they all have Vader in the suit as far as I know.
 
This does kind of make me wonder about an AU where Anakin doesn't fall to the dark side.

If memory serves, I think I heard about something like that in which Sidious's warnings were actually borne out and the Jedi did become increasingly facistic.

The terrible "alt universe" Infinities comic has Vader surviving ROTJ and donning an all-white version of his standard suit.

It's as awful as it sounds.

There was an incredible fan fiction where Anakin did not fall to the Dark Side, and let Mace kill Sidious. The fiction then went on to explore Anakin explaining his marriage to the council, Sidious returning in a clone body with an army to assault the Republic, and all the ramifications of the Clone Wars ending.

It is a super detailed, well written fiction, that I cannot find any more :(

Kinda, yeah. He didn't bother changing the design of his deliberately scary mask or anything, just painted the whole thing white. Ughhh...
I think that comic was done before it was really understood what Vader needed to live, so they just used his suit.

I personally don't think it's awful, but it definitely is odd in terms of the Rebels, who have been fighting against Vader for a long time, suddenly let him work with them.
 
Wookiepedia has a picture of Vader in the white suit, and it is a bit odd. It just looks like it was bleached out or had a really bright light reflecting off it.
Yep, that's the Infinities comic where Vader survived rejecting the dark side (and Palpatine escaped the Death Star). The really weird part is that Vader still lost his right arm in this version, too, so the Rebels didn't just repaint his suit out of a lack of other options, they also fabricated a matching robot-arm, which implies they could've given him another outfit entirely.

I fee like there's definitely something more visually interesting that could've been done with the concept of a maimed Anakin Skywalker as a Jedi.

I sort of remember something like that online a decade or more ago...it kept getting taken down for copyright from Lucasfilm.
That or there was another one were Anakin and Padme decide to run off together after the wedding during the Clone Wars to have a family, but Palpatine had yet another backup plan...use the arm Anakin lost on Geonosis to make a clone Anakin to be his new Darth Vader. Anakin misses most of the war, but returns with his teenaged kids to fight against the Empire. Something like that.

These were made before the cartoon series started. So there was a lot of room to make up stuff. But after The Clone Wars started, the addition of Ashoka, and learning more about what motivates Anakin Skywalker, makes such alternate tales more difficult to spin. The Clones Wars really fleshed out Anakin a lot more than the films did.
