Guinan never really did anything but spook Q. He never really seemed to be afraid of her. I think he still could have done to her whatever he wanted to although it may have to taken more to do it.

The Q cant die, they procreated for the first time in eons but that was only to stop the internal fighting because it was bleeding out into real space time and wasnt because they can die.

As for the question can a Q be injured by a phaser, not likely since they can manipulate space time and matter at will. Dont forget when Q had a fight with Sisko, Sisko smacked him one and although Q fell to the floor he was clearly not injured in any way.
