Star Trek mostly focuses on fully aware, sentient beings (most being humanoid too). But, on every Class M planet, there are certainly other animals. What do we know about alien animals (especially those which are not just renamed Earth ones)?

The Star Fleet [sic] Medical Reference Manual, published in 1977, briefly covers the anatomy and physiology of several extraterrestrial species including tribbles, the Horta, the Denebian slime devil and the Regulan bloodworm.

Horta are sentient. And according to Diane Duane, there's even one in Starfleet.
Yes, there are plenty of alien animals in Trek. But what Trek lacks severely are alien animals that are just in the background and have nothing to do with the plot. That's one thing Star Wars does a lot better than Trek IMO. Helps that SW is mainly a movie franchise but the point stands, especially today with all the VFX advances.
That world of dragons may be Berengaria, mentioned by T'Pol as a place with giant flying reptiles.
Apparently, the giant red monster that chases Kirk on Delta Vega in the 2009 reboot makes for a delicious steak. According to background replicator menu graphics in Prodigy.

Any of her Trek books I've read would have made a great movie.
Expense. Star Trek lacks that kind of budget.
TAS made an effort, even if those flying dragon things became repetitive.
And moopsy is from LD. Of course, moopsy is integral to the plot.
